Am I not able to create 2 Player Challenge games under the Schools category? It seems like this would be an excellent format for students to get used to the mechanics of the game, in terms of movements and strategy...
Would any other users agree that this would be useful, and would it be a huge ask to get it enabled?

I see no downside to enabling this option, but it really doesn't matter.
There is no press in a 2-player game. All information is publicly visible. You can just create the same, send the password out to the 2 relevant players, and send them on their way.

It would appear 2 Player Challenge games cannot be set as Schools games... This is what I would like to happen...

I know Flare, I understood your request. I'm saying it doesn't make a difference.
All 2-Player Challenge games are set as Friends games. Because there is no press, and because if someone surrenders it automatically ends the game, there is no difference between them being a School game or a Friends game.

My problem being that my students only have "Schools" accounts, and so cannot access Friends games...

Agreed. 2player challenge games can now be Schools as well as Friends games
