I am currently only playing one game, which is a training game. Does it count as a completed game (once completed!) for the purposes of applying to be an Aspiring Classicist, or do I need to play a non-training one?

Yes participating in a mentor game without surrendering is fine for you to apply to be ordained as an Aspiring Classicist once the game is finished.
