Yes surrenders show up whether the game is Rank or No Rank.

Its been answered before in other places. Surrenders show up in your stats no matter what type of game it was. It just doesnt give you the -1 point unless its a rank game.

This has actually changed around a bit over the past year or so. Right now (and probably going forward), no-rank surrenders and rank surrenders are both tracked individually in your stats.

What about a Defeat? If/when you lose your last supply center and/or Units, when are you removed from the game? I've got a game that I've lost all SC's and Units but it still has the me listed as playing? Will I get removed sometime in the future? Or do I have to wait until the game is finished?

This describes your situation:
If you have already been eliminated from a game (ie, you have no centers left), then you can't surrender. If you're not premium, the game no longer counts toward your 3-game limit, so you can join another one. If you don't want to see the game in your Games screen, you can use the Ignore button in the Statistics tab to hide it.

You won't ever be removed from the game at this point. That way there is a record of you playing it!
